Seafood & Shellfish Masterclass - Afternoon session

Keen to get to grips with seafood and shellfish? This course is the perfect introduction. Under expert guidance from Jeffrey, you’ll learn a range of essential techniques — from filleting round fish to cooking shellfish and building confidence in the kitchen — all using sustainably sourced ingredients from the Cornish coast.

Seafood can seem daunting for home cooks, but by the end of the session you’ll know exactly what to look for when sourcing quality fish and shellfish, and how to transform them into healthy, delicious meals. With small group sizes (1:8 chef to student), there’s plenty of hands-on support throughout.

What to expect on the day:

Arrival
Settle in with a warm welcome, tea or coffee. You’ll meet the rest of the group and get a relaxed introduction to the session with Jeffrey.

Session One
Watch a full demo on how to fillet and cure a round fish. Then it’s over to you — you’ll prepare your own, ready to turn this raw ingredient into a fresh, healthy ceviche.

Session Two
Next, master the art of pan-frying. Learn how to cook a fillet of fish to perfection and build a vibrant seasonal dish using local ingredients.

Session Three
Finish by learning how to cook mussels or clams (depending on what’s fresh that day) in a simple, flavourful sauce. Served with crusty bread — and perhaps a glass of wine as the day winds down.
